There will never be a replacement for real deal bacon, but this tofu version comes pretty close. It's got all the salty, meaty flavor and texture notes that make it's counterpart so good. The 'bacon' sandwiched with juicy heirloom tomatoes, crisp lettuce and spicy mayo make this a kicked up vegan version of the classic. Happy sandwiching!
blt sandwich with tofu bacon + sriracha mayo
for the 'bacon'
1 package extra firm tofu
1/4 cup tamari or soy sauce
1 tbs tomato paste
1 tbs maple syrup
1 tsp smoked paprika
pinch of cayenne pepper
for the mayo
1/2 cup vegan mayonnaise
1 tbs sriracha hot sauce
8 slices of your favorite bread
Preheat the oven to 425. Slice tofu into long, thin strips and place them on a parchment lined baking sheet. Bake for 10 minutes. Meanwhile mix all other bacon ingredients together in a bowl, set aside. Remove tofu from the oven and flip, place back in the oven for another 10 minutes. Meanwhile mix together mayo and sriracha, set aside. Remove tofu from the oven and pour the sauce over it. Make sure all the tofu is well covered with the sauce. Place the tofu back in the oven for 8-10 minutes. Once the tofu is crispy, remove it from the oven and let cool slightly.
To assemble sandwiches, toast the bread and spread sriracha mayo on each slice. Add lettuce, tomato and several slices of tofu bacon. Enjoy!
